A sweeter whiskey with caramel, butterscotch, and honey notes up front coupled with a light citrus and moderate oak finish. Nose comes across as sweet, creamy cereal. Enjoyably long warm finish.

Our bourbon is made from all-Colorado grains, Rocky Mountain water and a healthy dose of tomfoolery. We mill and cook the corn by hand, open air ferment it, and distill the mash in our Christian Carl Pot Still. Then we age it in first-use charred American Oak for as long as time will allow. “In Hoover we Trust.”

Distilled from Smoked Rye and malted barley and then infused with a cold smoker at proofing. This is an audacious little spirit that's not for the faint of heart, but the faint of heart don't come around here much anyway.

Open fermentation in wooden tanks with both house-cultured and indigenous yeast strains. Pot distilled and unfiltered. Aged four years in new American white oak charred barrels on earthen floors in the distillery's unheated dunnage-style bonded warehouse.

We begin by fermenting a traditional sour mash of corn and rye at colder temperatures, but without the aid of refrigeration. Fermentation takes more time this way, but results in a softer whiskey and develops subtle flavors such as vanilla, pear, and raspberry. We then distill the mash in our small batch copper potstill on grain to extract fuller and rounder flavors from the corn and rye. Finally, we barrel the distillate at the Pre-Prohibition standard of 98 proof, so that the barrel may add subtle notes of oak and vanilla and does not overpower the finished whiskey.

The finest blackberries from the Rocky Mountain region are harvested over the summer, juiced, and blended with our whiskey, creating an intensely rich spirit. The whiskey rests in charred American barrels, where notes of vanilla, raisin, and oak are pulled from the barrel itself, flavoring the whiskey. The spirit is naturally colored by the barrel and blackberry juice used, without the aid of artificial coloring agents. Lastly, it is bottled by hand to maintain the integrity of the sweet blackberries and soft finish.

We produce this Small Batch spirit entirely in-house, by hand, using only the best locally sourced ingredients. Our distillery equipment is similarly hand-built, lending an air of authenticity and quality you simply won’t find anywhere else. By proofing down with Rocky Mountain Snowmelt, aging a minimum of 4 years in new charred oak, and utilizing a special slow-distillation process, our award-winning Bourbon showcases rich flavor, a full body, and genuine Colorado craft excellence.

here’s something that just feels right about the number ‘3’. 3 years in New Oak, 3 flavors in the finishing barrel, and 3 yes’s: ‘Yes’ to adventure, ‘yes’ to flavor, and ‘yes’ to an experience you surely won’t forget. After the aforementioned time spent in new charred oak, we transfer our bourbon to a very special series of finishing barrels, seasoned with cinnamon whiskey, real vanilla bean extract, and finally authentic dark maple syrup. Over the 1+ years our whiskey spends resting in these 3-Way barrels, the spirit picks up decadent notes such as Cinnamon, Walnut, Orange Zest, Maple, and Vanilla Cream Frosting. Still with us? It gets even better: we keep our 3-Way whiskey at 100 proof so that you can enjoy a full-bodied, full-strength spirit that doesn’t compromise on its whiskey roots.

Cafe Miel is a luxurious coffee laden twist on our classic Honey Barrel Finished Bourbon. We partnered up with our friends at Denver’s own Corvus Coffee Roasters to create this very unique and decidedly spirituous espresso expression. Our 4-Year Honey Whiskey rested for an extra 24 hours with sustainably sourced whole roasted beans from a special Corvus blend with origins in Brazil, Colombia, and Rwanda. Look forward to notes of fresh and vibrant Espresso, Hazelnut, Chocolate, and Honeyed Pecans.

Specialty malts are utilized to create an extremely smooth and well rounded Straight Bourbon Whiskey. Great bourbon is made in Colorado. Nose: sweet corn, butterscotch, baking spice. Front: red velvet cake with a hint of stone fruit. Finish: dark cherry and dry cinnamon with a lingering baking spice. (90 Proof)

The rye whiskey starts with sweetness. Hints of cherry pits and vanilla, and then the spice of the rye comes in on the tip of my tongue, but it has a soft mouthfeel to it.Mid-palate, there are subtle notes of caramel and golden maple syrup with some tobacco and cinnamon notes as it becomes buttery smooth, and well-rounded between the sweet and spicy characteristics.

Our award-winning, high-rye Bourbon Whiskey is aged for a minimum of three years, in charred, new American oak barrels, and blended to reveal the unique qualities of the Bourbon Whiskey. Deep, honey-amber hue with pronounced aromas of butterscotch, candied orange and apple; dry cacao and brown sugar envelop the tongue as the spirit lingers with notes of vanilla and white pepper.
